Gubico was created to reinvent the concept of a plant-based yogurt, offering an innovative alternative in a market dominated by soy. Its differentiation lies in using chickpea as an alternative fermentable matrix to soy, promoting protein diversification and the valorisation of pulses. Sourced from organically grown Portuguese chickpeas, it shortens the supply chain, reduces environmental impact, and enhances soil biodiversity. Sustainability is further reinforced by reducing food waste through the use of apples unfit for retail and by valorising chickpea flour as a co-product.
