Apricot ice cream “13 Etoiles"

ECOTROPHELIA EUROPE 2011 - SWITZERLAND

Apricot saffron white-wine and apricot brandy blend ice cream

“13 Etoiles” (“13 Stars”) is an apricot ice with a strong and well identified Wallis brand intended to satisfy the palate of demanding customers, who are epicurean adults (from 20 till 99 years old), living as single or in family, interested in top-class regional brand food products. The association of apricot puree from Wallis (38%) and Mund saffron, as well as a very typical white wine (Petite Arvine) and apricot brandy (Abricotine, produced from the very aromatic Luiset variety) exhausts a new surprising, fresh and pleasant sensory profile. This profile is rounded in mouth by milk cream. The texture is between an ice cream and a sorbet. The ice contains no preserving, colouring agent or additional aroma, excepting the aroma of the natural ingredients used. “13 Etoiles” is profiled as an “ambassador product” for Wallis. The design of the packaging refers to the famous mountain Matterhorn. It has a truncated pyramidal shape on a square base. This enables the hostess/host or the cook to turn the product easily out, to lay a lovely dessert plate. This design also allows nomadic consumption, thanks to a small plastic spoon integrated in the cover, hidden beneath the descriptive label. According to most of ice products, “13 Etoiles” is assumed to be consumed best before 18 months, if the storage temperature is  -18°C.
