A boiled and smoked meat product, which combines lean beef meat and lean pork meat with fish myofibrillar proteins, unrefined corn oil and microencapsulated spices

The “Danubian Dietetic Salami" is a revolutionary meat product that aims to change consumers perceptions on this type of product (aperitif). The product is considered revolutionary because of its dietetic and functional character. First of all, the “Danubian Dietetic Salami" is low in animal fats due to their replacement with unrefined corn oil, which, on the other hand, enriches the product in essential fatty acids, phytosterols, phytostanols and vitamin E. In the same time, the “Danubian Dietetic Salami" is rich in proteins with high nutritional value, by replacing 20% of meat protein with myofibrillar fish proteins. The great advantage of this is total absence from the recipe of textured protein binders (soy or milk proteins) or some types of starches. The “Danubian Dietetic Salami" has extraordinary sensory properties, especially provided by the presence of pepper and coriander spices used as oily extracts in a microencapsulated system. From sensorial point of view, the dietetic salami tastes great and the large pork meat bits give the impression that the salami was made with fat.
