Marmeλλada is the first organic jam made by the fruits; carrot and pumpkin, without added sugar (it contains natural sugars), which will be launched and sold in Greece and Global market. This product can be used in the Greek traditional food market for breakfast and dessert. It is a jam with 40% fruits per 100g of final product. Organic carrots and organic pumpkins are used for production, directly after the harvest or maximum in the next three days. They are produced by an organic farmer in the countryside of Karditsa supporting, in this way, local sustainable and organic agriculture. All ingredients are certified by organizations of certification of organic products. Carrots and pumpkins contain a large amount of carotenoids, especially β-carotene, which have antioxidant action. Also they contain plenty of vitamin A, which protects the skin and keeps it healthy. This kind of packaging protects the product from sun exposition, due to the carton’s colour, and high temperature. The carton maintains the nutritional ingredients especially carotenoids that are affected by sun. It is important to maintain carotenoids because their antioxidant action increases product’s shelf life. Finally the carrot peels are collected and used for the manufacture of essential oil to improve product’s flavor. It is suggested for consumers that can not prepare a similar jam. Furthermore it is recommended for the parents who want to add something delicious and also healthy in their children’s daily diet due to the fact that this product contains fruits rich in fibers and it does not contain preservatives and artificial pigments. Because of the presence of natural sweeteners that replace added sugar it can be consumed by people that suffer from obesity and also by anyone who follows a balanced and hygiene diet.
